Frozen Piña Colada Pie
This pie is a lively finale to any summertime party… Ingredients:
1 Store-bought baked pie crust
1/3 cup of Coco Lopez (sweetened cream of coconut)
1/3 cup frozen Pineapple juice concentrate
2 ounces of 151-proof rum
1/2 cup whipped topping
1 1/2 cups vanilla ice cream
Method for sailing yacht Liberte Drink of the Month:
In a small bowl, combine the cream of coconut, pineapple juice, rum, and whipped topping. Put ice cream in a large, heavy bowl, and quickly mash and stir in the coconut mix. The alcohol will soften the ice cream and make it easier to work with.
Spoon into the pie crust and freeze for several hours until firm…
Cut up and serve.
Liberte used to sail in the Virgin Islands during the winter months and the Southern Caribbean during the summer months with Captain Gordon Monsen.
