Captain Peter and Chef Sylvie are experts at pampering guests.  A native of France, Sylvie enjoys the tradition of buying fruits, vegetables, and fish from local vendors. Local specialty grocers provide fine-quality meats and gourmet provisions.

Caribbean-grown spices find their way into Sylvie’s favorite island dishes, sometimes adding a tropical twist to her classic French cuisine. Sylvie treated herself to a l’Art de la Table course in France last summer to take her creative table settings to a new level!

73’ Schooner “Jambalaya”, built by traditional shipwrights on the island of Carriacou, comes fully equipped:

  • En Suite Master Stateroom is uniquely spacious with 9-foot headroom, a king-sized bed plus a day sofa.
  • Two guest cabins with double beds share the guest bathroom which has a stall shower and toilet.
  • Fine bed linens, fluffy towels, and a selection of L’Occitane toiletries add a touch of luxury.
